    Recent Progress on the Study of Testing Methods for the Determination of Benzoyl Peroxide in Flour

    • An introduction on the role of adding benzoyl peroxide in flour and its hazards and a review on the recent progress on testing methods of benzoyl peroxide, which covering mainly the last decade and relating especially to sample pretreatment, qualitative analysis and quantitative inspection principle, detection limit etc., were presented.The testing methods were divided into five types: chemical analysis, spectrometry, chromatography, mass spectrometry and electrochemical analysis.The methods for testing the benzoyl peroxide added in flour were discussed and summarized.
