Abstract
In order to accurately estimate the bioavailable arsenic in contaminated food and practically to assess its adverse health effect, a test system simulating the digestive process in human gastrointestinal tract was established. The definition and rationale of the model, methods and factors that might affect the bioavailability were briefly introduced, and the latest progress on the study of bioavailability and bioaccessibility of arsenic was reviewed in this paper.
