    Recent Progress on the Study of Testing Methods for the Determination of Benzoyl Peroxide in Flour

    • 摘要: 本文介绍了面粉中添加过氧化苯甲酰的作用及其危害,综述了近10年间过氧化苯甲酰检验方法的研究及进展,包括样品前处理及定性分析、定量检验的原理及检出限等。检测方法主要为5类,化学分析法、光谱法、色谱法、质谱法及电化学法,并对面粉中过氧化苯甲酰分析方法进行了总结和讨论。

       

      Abstract: An introduction on the role of adding benzoyl peroxide in flour and its hazards and a review on the recent progress on testing methods of benzoyl peroxide, which covering mainly the last decade and relating especially to sample pretreatment, qualitative analysis and quantitative inspection principle, detection limit etc., were presented.The testing methods were divided into five types: chemical analysis, spectrometry, chromatography, mass spectrometry and electrochemical analysis.The methods for testing the benzoyl peroxide added in flour were discussed and summarized.
