    Microbial Contamination of Tableware in Households

    • 摘要:
      目的 了解居民家庭餐具微生物污染状况。
      方法 在北京上海两地收集志愿者家庭清洗后的餐具, 对收集到的187份餐具进行细菌总数检测和细菌种类分析。
      结果 北京地区家庭餐具细菌总数范围为45 cfu/份~5.20×106cfu/份, 上海地区家庭餐具细菌总数范围为 < 15 cfu/份~6.99×106cfu/份; 金黄色葡萄球菌的总检出率是3.21%(北京5.21%, 上海1.10%), 大肠杆菌的总检出率是11.23%(北京4.17%, 上海18.68%); 通过试验从样本中分离出20种细菌, 绝大多数为条件致病菌。
      结论 居家餐具微生物污染较为严重, 具有潜在危害, 需采取有效措施, 减少餐具污染, 保证人群健康。

       

      Abstract:
      Objectives To study the situation of microbial contamination on tableware in households.
      Methods Tableware samples cleaned manually in 187 household were collected in Beijing and Shanghai to analyze the microbiological quality.
      Results The aerobic plate counts for each tableware were in the range of 45 cfu/piece-5.20×106cfu/piece in Beijing, and were < 15 cfu/piece~6.99×106cfu/piece in Shanghai. The positive rate of staphylococcus aureus was 3.21% and that of Escherichia coli was 11.23%.There were 20 species of bacteria detected from samples, most of which were conditioned pathogens.
      Conclusions It highlighted the potential for contamination and risk of tableware after manual cleaning in households. Something should be done to reduce the risk to ensure human health.
